Avocado and Poached Egg on Toast

Ingredients for what is in the photo :

  • 1/2 Avocado – mashed with the lemon juice
  • Juice of 1/2 lemon
  • 2 slices of warburton seeded batch bread 400g loaf
  • 5 cherry tomatoes – halved
  • 1 sprig of thyme – leaves only
  • 2 medium eggs – poached in water
  • Salt and Pepper

Avocado and Poached Egg on Toast


Mash the avocado with the lemon juice and thyme leaves.

Poach the 2 eggs in water and toast the bread and assemble together, and sprinkle with black pepper and pink rock salt.
