Houmous on Corn Thins

Vegan friendly

Serves 1 – makes 4 thins
Preparation time – 5 mins

Ingredients for the houmous:

  • 1 can chickpeas drained 
  • Juice of 1 1/2 lemons 
  • 2 tbsp tahini paste 
  • 2 tsp paprika 
  • 2 garlic cloves minced 
  • Salt/Pepper to taste

This makes 450g worth of houmous, for this lunch option, you only require 80g of this houmous.

Method:

Basically throw everything into a processor and blitz for approx 5 mins, stopping to push the food around the sides down.

I served mine on Corn Thins and topped with diced tomatoes/basil/spring onion and cucumber with a final sprinkle of Sumac spice.

Good to have as a snack as well.
