Sweet Potato with Tuna topping

Serves 1


  • 1 medium sweet potato – sliced into 3 slices – it works out to only 100g
  • 1/2 can of tuna in spring water
  • 1 tsp light mayo
  • 10g sweet corn

These took 12 minutes to cook in the toaster, and had to microwave them for one minute as well otherwise they would have been too hard. 

You could cook in the oven on a wire tray and brush with a nice infused oil instead.
