Feta Omelette with apricots and crisp bacon fries

Details:

  • Serves 1  

Ingredients:

  • 2 eggs
  • 1 slice of crumbled ham
  • 20g feta cheese
  • Handful of spinach
  • 3 fresh apricots
  • 2 slices of dry cured smoked cured streaky bacon

Feta Omelette with apricots and crisp bacon fries

Directions:

Cook the bacon under the grill for a few minutes on each side.

Whisk the eggs, and add to a non stick frying pan.  Add the ham, feta and spinach, cook the omelette for around 4 minutes.

Serve with the sliced apricots and crispy back pieces.

If you get a little bit of everything in your fork at once it’s like a mouth explosion of taste and flavours.
