- Serves 1
- 2 eggs
- 1 slice of crumbled ham
- 20g feta cheese
- Handful of spinach
- 3 fresh apricots
- 2 slices of dry cured smoked cured streaky bacon
Cook the bacon under the grill for a few minutes on each side.
Whisk the eggs, and add to a non stick frying pan. Add the ham, feta and spinach, cook the omelette for around 4 minutes.
Serve with the sliced apricots and crispy back pieces.
If you get a little bit of everything in your fork at once it’s like a mouth explosion of taste and flavours.
