Mixed Berry Fruit Oat Flapjack bars


  • Makes 12 bars 


  • 120g porridge oats
  • 150ml unsweetened almond milk
  • 2 eggs
  • 13g desiccated coconut
  • 3 handfuls of frozen mixed berries
  • 1 tbsp maple syrup
  • 1 tsp coconut palm sugar – for top
  • 1/2 tsp Salted caramel flavouring
  • 1 tsp baking powder   

Mixed Berry Fruit Oat Flapjack bars


Preheat oven to 190c. 

Mix all ingredients apart from the sugar in a large mixing bowl. 

Pour into a silicone square baking tin, top with the coconut sugar. 

Cook for 25/30mins, or until firm to the touch.

Take out and let it cool, before cutting into bar shapes. 

I managed to cut 12 good size bars. Good for any meal, and handy snacks to take out with you.
