Goulash Soup

Serves- 8 bowls 

Ingredients

  • 300g lean beef mince 
  • 2 large onion chopped 
  • 1 garlic clove chipped finely 
  • 1 red pepper small slices 
  • 3 sticks of celery 
  • 1 X 500g box of passata, or 500ml of homemade tomato sauce 
  • 1 can of chopped tomatoes 
  • 3 tsp paprika 
  • 2 tsp ground cumin 
  • 1 tsp ground coriander
  • 1 tsp maple syrup (optional) 
  • 60g small pasta shapes (I used baby friendly pasta)
  • 1 tsp dried or fresh parsley 
  • 2 pints of boiling water 
  • 1 vegetable oxo cube 

Method:

  1. Fry the mince in a little of the water, until browned, add the celery, onion, garlic, pepper, and spices, and cook for 5 mins.
  2. Add the tomatoes, passata, maple syrup and pasta shapes, stir and reduce to a simmer. 
  3. Cover and cook for 30 mins. Once cooked stir through the parsley, and serve on its own or with some warm crusty petit pain rolls.
