Serves- 8 bowls
Ingredients
- 300g lean beef mince
- 2 large onion chopped
- 1 garlic clove chipped finely
- 1 red pepper small slices
- 3 sticks of celery
- 1 X 500g box of passata, or 500ml of homemade tomato sauce
- 1 can of chopped tomatoes
- 3 tsp paprika
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp maple syrup (optional)
- 60g small pasta shapes (I used baby friendly pasta)
- 1 tsp dried or fresh parsley
- 2 pints of boiling water
- 1 vegetable oxo cube
Method:
- Fry the mince in a little of the water, until browned, add the celery, onion, garlic, pepper, and spices, and cook for 5 mins.
- Add the tomatoes, passata, maple syrup and pasta shapes, stir and reduce to a simmer.
- Cover and cook for 30 mins. Once cooked stir through the parsley, and serve on its own or with some warm crusty petit pain rolls.
