Carrot Cake oat bars


  • Makes 12 bars


  • 120g porridge oats
  • 150ml unsweetened almond milk
  • 2 eggs
  • 1 1/2 carrots finely grated
  • 1 tsp maple syrup
  • 1 tsp coconut palm sugar – for top
  • 28g soft figs finely diced
  • 1 tsp baking powder
  • 1 tsp allspice

Carrot Cake oat bars


Preheat oven to 180c. 

Mix all ingredients apart from the sugar in a large mixing bowl. 

Pour into a silicone square baking tin, inline mine with non stick paper as well as easier to lift out after, top with the coconut sugar. 

Cook for 15/20, or until firm to the touch, some ovens may take slightly longer.

Take out and let it cool, before cutting into bar shapes. 

I manage to cut 12 good size bars out of this. 

I use an 8×8 tin to cook them in.
