Recipe for the Homemade yoghurt dip:
- 30g low fat natural yoghurt,
- 1/4 cucumber grated,
- 1 garlic clove minced,
- salt/pepper.
- mix it together topped with paprika.
I used little gem lettuce leaves, and filled with one portion of my bolognese mix between them all
Recipe for the bolognese mixture:
Makes enough for 4 portions
- 500g extra lean mince
- 1 large onion diced
- 2 garlic cloves chopped
- 2 large beef tomatoes diced
- 1 tsp tomato purée
- 2 carrots either diced or grated
- 2 tsp dried basil
- 1 tbsp fresh basil chopped
- 1 tsp rapeseed oil for cooking
I make this up in batch cooking and freeze for use as and when required.
Cook the onion and garlic in the oil in a large frying pan.
Add the mince and brown off
Add the tomatoes, purse and dried basil, cover and cook for around 2hrs, stirring a few times.
When ready, add the grated carrot (idea from TV programme, I usually add diced carrots when at adding meat stage)
Add the fresh basil and serve.
I use this mixture in lettuce wraps, spaghetti bolognese, with spiralizer courgette, on top of nachos, with rice/quinoa/, in wraps, pasta bake, my baby loves this food as well.
