Bolognese wraps with veggie chips

Recipe for the Homemade yoghurt dip:

  • 30g low fat natural yoghurt,
  • 1/4 cucumber grated,
  • 1 garlic clove minced,
  • salt/pepper.
  • mix it together topped with paprika.

I used little gem lettuce leaves, and filled with one portion of my bolognese mix between them all

Recipe for the bolognese mixture:

Makes enough for 4 portions

  • 500g extra lean mince
  • 1 large onion diced
  • 2 garlic cloves chopped
  • 2 large beef tomatoes diced
  • 1 tsp tomato purée
  • 2 carrots either diced or grated
  • 2 tsp dried basil
  • 1 tbsp fresh basil chopped
  • 1 tsp rapeseed oil for cooking

I make this up in batch cooking and freeze for use as and when required.

Cook the onion and garlic in the oil in a large frying pan.

Add the mince and brown off

Add the tomatoes, purse and dried basil, cover and cook for around 2hrs, stirring a few times.

When ready, add the grated carrot (idea from TV programme, I usually add diced carrots when at adding meat stage)

Add the fresh basil and serve.

I use this mixture in lettuce wraps, spaghetti bolognese, with spiralizer courgette, on top of nachos, with rice/quinoa/, in wraps, pasta bake, my baby loves this food as well.
